This was my thermometer when I left my neighborhood this morning for school.

At some point, it dropped to 44 degrees. Brrr. I do not like being cold (shhh, don’t tell my students. I keep my room as cold as I can take it so I don’t smell them…), but I do love some good comfort, cold weather food.

Tonight’s menu included Pomegranate Sweet Potato Quinoa from Sugar Free Mom. I made this a lot last year for lunches. It makes a lot and the pom keeps it fresh and the sweet potato makes me feel like I’m eating a lot heavier than I really am. Here are my process pics.
